Juicy and delicious!
Our pasture raised no corn no soy ham hock.
Ingredients
*1 2-3lb. Ham Hock
*¼ cup Olive Oil
*1 large Onion Sliced
*6 large Garlic Cloves Sliced
*1 cup Beef Stock
*2 Bay Leaves
*2 3” Cinnamon Sticks
Instructions
Preheat oven to 450°F.
Rub Olive oil all over the ham hock. Do this over the Dutch oven and let the oil drip into the pan. Set the hock(s) aside.
Place the onion & garlic slices on the bottom of a the Dutch oven, braising dish or roasting pan. Place the ham hock(s) on top of them. Pour the beef stock in the dish.
Place the dutch oven, braising dish or roasting pan in the oven uncovered, and roast for about 25 minutes, or until the skin is a little crispy.
Remove from the oven and lower the heat to 350°F.
Add the bay leaves, and cinnamon sticks cover, and place back into the oven. Roast for 1-2 more hours, or until the meat is easily removed from the bone.
Cooking time can vary based on the size of your hock(s) so check often they are very forgiving so don’t worry too much if you go over in temp. You can aim for 165* internal temperature, but I always trust physically testing for tenderness. There will also be shrinkage around the bone see the difference in the pictures.
